I hesitate to suggest any changes, because it's obvious that you know what you're doing with this writing stuff. The overall tone seemed to me to be quite encyclopedia-serious, which makes the jokes quite deadpan (as opposed to, for instance, overt silliness and buffoonery). A sustained work of clever buffoonery may achieve greater joke-density, but this is an excellent and honorable way to approach the subject.
Incidentally, on eating penguins (you may know this already): Captain Scott's men tried eating penguins but found them extraordinarily unpalatable. They "...found a diet of pure penguin meat to be 'dull and demoralizing'" indeed!
